Simple Breakfast Pancakes




Ingredients:
(Serves 1-2)

100g plain flour
100g wholemeal flour
200ml water
2 tsp icing sugar

In a jug measure the flour and mix in the icing sugar and water. Using a whisk or a fork form a thick smooth batter. On the stove heat up your ceramic frying pan (found on amazon) to medium heat. Then pour in some of the batter and allow to cook. No oil needed. Once it appears to be cooked and the edges of the pancake start to rise using a spatula flip the pancake and fry the other side. Transfer to a plate and repeat for the remaining batter. Simple and delicious served with chopped banana and cinnamon :)

Raw Vegan Cake Pops

Raw Vegan Cake Pops



Ingredients:
(Makes 12)

1 pack skewers
1 cup dried figs
1 cup dates
2 ripe frozen bananas
1/2 cup frozen raspberries 
1 apple
1 sundried banana (optional) 
1/4 tsp cinnamon 
1/4 cup carob powder
1 tsp vanilla extract 
100ml coconut water
1/3 cup sesame seeds
 
In a food processor add the figs and about 4 dates. Blitz until dough like texture. Pour into a bowl and take out small handfuls and roll into balls between your palms. Then place on a plate and pop in the freezer whilst you prepare the toppings. 

First for the carob topping: in your blender or with a hand blender blend the rest of the dates, carob, vanilla and coconut water until a smooth paste. (This is also an amazing 'chocolate' spread recipe) 

Secondly the nice cream topping: blend the frozen bananas, pour half into a bowl, add the frozen raspberries pour into a bowl, allow to thaw a bit for easy blending. 

Thirdly the apple topping: in your food processor pulse the apple and cinnamon to form tiny pieces. With scissors slice up the sundried banana into small pieces and mix in. 

Fourthly pour the sesame seeds into a bowl.   

Take out the fig balls from the freezer and stick on the top of each skewer. Then dip in the toppings and serve!

Grape and Passion Fruit Bites



Ingredients:
(Serves 1-2)

500g red grapes
1 passion fruit

Pick all the grapes off the stalks and place in a container, leave in the freezer until they're frozen (about an hour) or until you fancy eating them. Take out the freezer and pour into a bowl, then scoop the passion fruit flesh over the top and stir into the grapes, the passion fruit juices should freeze onto the grapes! Yum!

Coodles and Golden Kiwi Salsa

Coodles and Golden Kiwi Salsa


Ingredients: 
(Serves 1-2)

2 cucumbers
6 golden kiwis
4 large heirloom tomatoes
1/2 cup soaked sundried tomatoes 
1 handful fresh coriander 

Using a julienne peeler (from Lakeland) create cucumber noodles. In a bowl blend the tomatoes and sundried tomatoes, then scoop out the flesh from the kiwis and mix in the salsa. Finely dice the coriander and sprinkle on top. Super refreshing!

Ingredients:
(Serves 1)

1 large cucumber
1/3 cup fresh coriander
1/4 cup lemon juice (optional)
200g dates

Using a julienne peeler create coodles! Mix in the lemon juice and finely diced coriander, serve with dates and enjoy!

Ingredients:
(Serves 1-2)

6 super soft golden kiwis 
2 zucchinis
4 large heirloom tomatoes
1/2 cup soaked sundried tomatoes
1 large handful fresh basil
5 olives (optional) 

Slice the kiwis in half and scoop out the flesh into a bowl. Blend up half the tomatoes with half the basil and half the sundried tomatoes with a hand blender. Slice all of the other halves into a large bowl. Using a mandolin finely slice the zucchinis into rounds. Mix them all but the kiwis together in a large bowl and top with olives. Delicious!

Golden Kiwi and Heirloom Tomato Salad

Sweet Potato Bean Burgers!

Sweet Potato Bean Burgers


Ingredients:
(Makes 12 burgers)

2 large sweet potatoes
1 can haricot beans (I just rinsed baked beans)
3 carrots grated
4 small shallots
1 tsp mixed herbs
1/2 tsp cumin
1 handful fresh parsley

Peel and dice the sweet potato into small chunks. Bring a wide based pan of water to the boil and add in the sweet potato. While that's cooking, grate the carrots into a large bowl, add the beans and finely chopped shallots. Once the sweet potato is soft, drain the juices and mash. Add the mash to your large bowl and mix together. Add the mixed herbs, cumin and parsley. Mix and squish together. For best results leave in the fridge overnight to marinade. Then preheat your oven to 200 degrees celcius. Mould the mixture into 12 patties and place on a tray covered with baking paper. Cook for 30 mins until golden and firm. Then take to a BBQ or just serve with salad. Super!

Raw Marinated Zucchini Tacos


Ingredients:
(Serves 1-2)

1 head romaine or cos lettuce
500g really ripe tomatoes 
1/2 lemon juiced 
2 large zucchinis
1 cup soaked sundried tomatoes 

With a hand blender blend the tomatoes and lemon juice. Using a mandolin slicer, slice the zucchini into thin slices and add to the blended tomatoes. Place in the fridge over night. And also soak the sundried tomatoes. The next day take off the lettuce leaves and spoon the mixture into the taco and place in some sundried tomatoes too, enjoy! :)

Ice Cream Smoothie!

Ingredients:

(Serves 1-2)

6 frozen ripe bananas

1 litre water 


Allow your bananas to ripen fully so allow them to go nice and brown, preferably completely brown as this will make the sweetest and creamiest ice cream smoothie. Peel your bananas, tear into inch size pieces and lay on a tray in your freezer or in a freezing container. Once frozen add to your blender and fill until completely covered with water. Pulse blend until a thick, creamy, cool ice cream smoothie forms! This one is a definite winner :)

Ingredients:

(Serves 1) 


2 large juicy plums

3 nectarines

2 donut peaches

8 strawberries 


Chop up the plums, peaches, and donuts into quarters and remove the stone, add to a large bowl. Slice the strawberries in half, leaving the green tops for extra nutrition. Super juicy awesomeness.

1 large piel de sapo melon 

Choosing the best melon can make your meal extra enjoyable. Look for a melon with a large bottom circle, this is where the flower was attached. The larger the circle the longer it has been on the stem and the sweeter it will be. You want to wait until the melon is really ripe as that's when the flesh will scoop out soft and easily. It will be super juicy and satisfying. To tell whether it is ripe, you want to look for soft ends, a richer coloured skin and a sweet scent.

Donut Peaches!

Ingredients:
(Serves 1)

6 donut peaches

Make sure they are perfectly ripe before eating. Peaches are climacteric fruit which means they have a starch reserve that turns into sugars as they ripen. They will be more juicy, sweet and much tastier.  You want them to be soft to the touch, the more delicate the better. Literally just grab and go, natures perfect fast food :)

Summer Time Corn on the Cob

Summer Time Raw Corn on the Cob
Ingredients:
(Serves 1) 

1-2 fresh corn cobs 
2 handfuls fresh spinach
4 sprigs parsley 
3 nasturtium flowers (optional and edible) 

The fresher the corn the tastier it is as it is less starchy. Just shred the spinach and tear up the parsley, pick some nasturtium flowers if you have some. Mine are homegrown, they add a nice spice to the dish. Then just add to a large bowl and serve. If the corn is too starchy raw then lightly steam. Super yummy.

Ingredients:
(Serves 1)

1 large watermelon 
1 punnet of strawberries

Slice the watermelon and sieve out most of the seeds, add to your blender and throw in the strawberries. Blend until creamy and serve. Add some ice for an extra refreshing drink.

Raw veggie Mini Pizza

Raw Veggie Mini Pizza


Ingredients:
(Serves 1-2)

1 large wide aubergine 
1 beef tomato 
2 carrots 
1 cup diced broccoli
1 zucchini spiralized 
1 spring onion

Sauce:
1 tbsp tahini 
2 sundried tomatoes
1/2 lemon juiced 

Slice the aubergine width ways into 1/2 inch pizza base slices. Coat the slices in lemon juice and set aside whilst you prepare the toppings. Dice the tomatoes, broccoli and spring onions finely, grate the carrot and spiralize the zucchini. For the sauce, blend all the sauce ingredients with a little water if nesessary using a hand blender. Finally, coat the slice with some sauce then top with the toppings as shown and serve :) super tasty!
