Nutty Nice Cream!



I've had this recipe idea written in my notes for so long and have just never got round to making it. But today was the day when I thought ah yes let's make that now. So I did and wow it was incredible! Now I know it may not look the prettiest of nice creams that are all over Instagram but if taste could be on Instagram then this one would be very much liked. The combination of peanuts and the sweet creamy bananas makes it fabulous, kale was a cheeky addition to boost the nutrients which I personally can't taste in it at all. I do find however the added kale makes me feel more balanced and more satisfied afterwards most likely due to the fibre. It's always good to add in your greens and what better way than in your tasty treat. An awesome tip would be to freeze your whole bag of kale and then add it to whatever you fancy either blending it into a smoothie like this or adding it to pasta or rice. It's a nice trick to keep it fresh for longer. I hope you try out this recipe and enjoy it as much as I do. 

(Serves 1)

Ingredients:

1 tsp peanut butter
1 handful frozen kale
1 - 2 spotty bananas
1 cup water 

Peel and break the bananas into pieces and freeze spaced out on a freezer tray. Once frozen place into the blender along with the rest of the ingredients. Blend and serve! Top with coconut nectar and seeds. Delicious!

Ice Cream Smoothie!

Ice Cream Smoothie! 



Ingredients:

(Serves 1-2)

6 frozen ripe bananas

1 litre water 


Allow your bananas to ripen fully so allow them to go nice and brown, preferably completely brown as this will make the sweetest and creamiest ice cream smoothie. Peel your bananas, tear into inch size pieces and lay on a tray in your freezer or in a freezing container. Once frozen add to your blender and fill until completely covered with water. Pulse blend until a thick, creamy, cool ice cream smoothie forms! This one is a definite winner :)

Pineapple Ice Cream 100% Fruit

Pineapple Ice Cream


Ingredients:
(Serves 1)

4 ripe spotty bananas 
1/2 cup frozen pineapple 

Allow your bananas to ripen fully so they're super sweet.  Peel and break into inch size pieces and lay on a tray in your freezer. After freezing (2hrs minimum) place the frozen pieces into your blender. Add the frozen pineapple chunks and pulse blend until creamy. Inbetween blends push the banana and pineapple down into the blade. Add in a drop of water if needed. Blend until it turns a white creamy ice cream texture and serve! Delicious :)

Breakfast Nana Ice Cream

Ingredients:
(Serves 1)

6 frozen ripe spotty bananas
2 fresh spotty bananas 
1 cup frozen strawberries 
1/2 - 1 cups water 
1 tsp coconut sugar (optional) 

Freeze your 6 bananas peeled in small pieces. Then in your blender add 1 fresh banana and place 3 frozen bananas on top, blend the bananas with a little water until fluffy and creamy (you may need to stir to get it blending). Add to your bowl, then to the blender again add 1 fresh banana and the other 3 frozen bananas on top and the frozen strawberries, add some water and blend. Once creamy, pour on top of the previous ice cream, sprinkle on some coconut sugar and serve! The perfect and yummiest breakfast ever!

Grape Citrus Sorbet

Ingredients:
(Serves 1)

500g red grapes
1 lemon juice 

Remove the stalks from the grapes and freeze. Once frozen place in a blender with 2-3 cups of water and the lemon juice. Blits together, pour into a cute bowl and enjoy! Perfect summer breakfast :)

Raspberry and Banana Nice Cream

Ingredients:
(Serves 1)

5 frozen spotty bananas
1/2 cup frozen raspberries 
1-2 cups water 

Place all the ingredients in a large blender. Pulse blend into a thick rich nice cream. You may need to stir to get the blades turning. Then pour into a bowl and enjoy!

Cookie Dough Ice cream! - 'vegan style'

Ingredients:
(Serves 1-2) 

5 frozen very ripe bananas extra sweet (peel and freeze in container)
5 sticky gooey medjool dates (from local grocer) 
Few drops Vanilla essence or scoop seeds out fresh vanilla pod 

Take the bananas out freezer and let thaw for 10 mins or run under water briefly. Add to a large mixing bowl and blend away (check out my YouTube videos for a demo*). Once fully blended and creamy mix in the vanilla essence and blend again. Then chop the dates into tiny chunks and mix into the ice cream to act as the cookie dough. Serve! The best ice cream in the world! I ate this whole thing for breakfast and almost fell of my chair it was that good. 100% guilt free, eat all day as you wish.

Creamy Raspberry Delight

Ingredients:
(Serves 1)

1/2 cup raspberries 
3 spotty bananas 

Peel bananas, break into pieces, place into a freezable container with the raspberries and freeze for 2+ hours (best to freeze a load then use when needed). When frozen, place bananas and raspberries into a bowl, and blend up with a hand blender. Serve in a pretty bowl and dig in!

TopTip: make five times this potion because it is sooo good that you will be wishing you had made more ;) Also because this is extremely healthy it is 100% guilt free! :D


Chocolate Heaven Whip

Ingredients: 
(Serves 1) 

3 spotty bananas
2 tsp carob powder *

Peel bananas, break into pieces, place into a freezable container and freeze for 2+ hours (best to freeze a load then use when needed). When frozen place bananas into a bowl, sprinkle with the carob and blend up with a hand blender. Serve in a pretty bowl and dig in!

*carob grows on trees, is caffeine free and tasted better than chocolate. I used powdered carob beans  which can be found in some health food stores or on amazon.

Merry Berry Bliss Ice Cream and Smoothie

Ingredients:
(Serves 1 or 2)

6 ripe bananas
4 frozen bananas
1 cup frozen blackberries 


To a blender add the ripe bananas, blackberries and about 500 ml water. Pulse until smooth and pour into a jug. Then add the frozen bananas to the empty blender and pour about 1/2 cup of the smoothie back into the blender. Boil the kettle and pour a little over the frozen bananas to melt them slightly. Blend it up, you may need to pause a few times to bash the banana pieces up. Once thick and creamy, serve. Pour the smoothie into a glass. Delicious!
