Breakfast Recipe: Raw Vegan Fruit Muesli | gluten free 

This has been my go to breakfast since being on placement this week. Full of goodness and super satisfying. It's also made with all raw ingredients, and it's gluten free and nut free for those of you avoiding them.


(Serves 1)
Ingredients:

100g frozen raspberries, crushed
1 tbsp buckwheat groats or gf oats
1 banana or apple, diced 
1 tbsp flaxseed mix 
2 gooey dates, chopped 
1/4 tsp cinammon 
1/2 inch grated fresh ginger 
200ml water 

In a bowl add the raspberries. They're best when crushed so break them up by bashing the bag they're in. Add the buckwheat, chopped banana, flaxseed, dates, cinnamon and grate in the fresh ginger. Mix together with warm water from the kettle to form a sweet raspberry 'milk'. Alternatively add a plant based milk or blend 4 dates with 200ml water or aquafaba (chickpea/ bean juices) to form a super tasty 'milk'.

Grape and Passion Fruit Bites



Ingredients:
(Serves 1-2)

500g red grapes
1 passion fruit

Pick all the grapes off the stalks and place in a container, leave in the freezer until they're frozen (about an hour) or until you fancy eating them. Take out the freezer and pour into a bowl, then scoop the passion fruit flesh over the top and stir into the grapes, the passion fruit juices should freeze onto the grapes! Yum!

Coodles and Golden Kiwi Salsa

Coodles and Golden Kiwi Salsa


Ingredients: 
(Serves 1-2)

2 cucumbers
6 golden kiwis
4 large heirloom tomatoes
1/2 cup soaked sundried tomatoes 
1 handful fresh coriander 

Using a julienne peeler (from Lakeland) create cucumber noodles. In a bowl blend the tomatoes and sundried tomatoes, then scoop out the flesh from the kiwis and mix in the salsa. Finely dice the coriander and sprinkle on top. Super refreshing!

Ingredients:
(Serves 1)

1 large cucumber
1/3 cup fresh coriander
1/4 cup lemon juice (optional)
200g dates

Using a julienne peeler create coodles! Mix in the lemon juice and finely diced coriander, serve with dates and enjoy!

Ingredients:
(Serves 1-2)

6 super soft golden kiwis 
2 zucchinis
4 large heirloom tomatoes
1/2 cup soaked sundried tomatoes
1 large handful fresh basil
5 olives (optional) 

Slice the kiwis in half and scoop out the flesh into a bowl. Blend up half the tomatoes with half the basil and half the sundried tomatoes with a hand blender. Slice all of the other halves into a large bowl. Using a mandolin finely slice the zucchinis into rounds. Mix them all but the kiwis together in a large bowl and top with olives. Delicious!

Sweet Fruit Juicy Bowl



Ingredients:

(Serves 1) 


2 large juicy plums

3 nectarines

2 donut peaches

8 strawberries 


Chop up the plums, peaches, and donuts into quarters and remove the stone, add to a large bowl. Slice the strawberries in half, leaving the green tops for extra nutrition. Super juicy awesomeness.

Ingredients:
(Serves 1-2) 

1 large piel de sapo melon 

Choosing the best melon can make your meal extra enjoyable. Look for a melon with a large bottom circle, this is where the flower was attached. The larger the circle the longer it has been on the stem and the sweeter it will be. You want to wait until the melon is really ripe as that's when the flesh will scoop out soft and easily. It will be super juicy and satisfying. To tell whether it is ripe, you want to look for soft ends, a richer coloured skin and a sweet scent.

Donut Peaches!

Donut Peaches!
Ingredients:
(Serves 1)

6 donut peaches

Make sure they are perfectly ripe before eating. Peaches are climacteric fruit which means they have a starch reserve that turns into sugars as they ripen. They will be more juicy, sweet and much tastier.  You want them to be soft to the touch, the more delicate the better. Literally just grab and go, natures perfect fast food :)

1 large watermelon 
1 punnet of strawberries

Slice the watermelon and sieve out most of the seeds, add to your blender and throw in the strawberries. Blend until creamy and serve. Add some ice for an extra refreshing drink.

Pineapple Ice Cream 100% Fruit

Pineapple Ice Cream


Ingredients:
(Serves 1)

4 ripe spotty bananas 
1/2 cup frozen pineapple 

Allow your bananas to ripen fully so they're super sweet.  Peel and break into inch size pieces and lay on a tray in your freezer. After freezing (2hrs minimum) place the frozen pieces into your blender. Add the frozen pineapple chunks and pulse blend until creamy. Inbetween blends push the banana and pineapple down into the blade. Add in a drop of water if needed. Blend until it turns a white creamy ice cream texture and serve! Delicious :)

8 spotty bananas
4 handfuls fresh lettuce 
1 cup water 

In your blender place all the lettuce and water, blend until fine. Add in your bananas and pulse blend until smooth and creamy. Done!

Grape Iced Bites

Ingredients:
(Serves 1)

500g green and/or red grapes
1 pack wooden squewers

Rinse the grapes and slide them onto the squewers. Place in the freezer for 1 hr minimum. Take out and enjoy in the hot sun! Nature's perfect ice lolly :)

Breakfast Nana Ice Cream

Ingredients:
(Serves 1)

6 frozen ripe spotty bananas
2 fresh spotty bananas 
1 cup frozen strawberries 
1/2 - 1 cups water 
1 tsp coconut sugar (optional) 

Freeze your 6 bananas peeled in small pieces. Then in your blender add 1 fresh banana and place 3 frozen bananas on top, blend the bananas with a little water until fluffy and creamy (you may need to stir to get it blending). Add to your bowl, then to the blender again add 1 fresh banana and the other 3 frozen bananas on top and the frozen strawberries, add some water and blend. Once creamy, pour on top of the previous ice cream, sprinkle on some coconut sugar and serve! The perfect and yummiest breakfast ever!

Maple Raisin Pink Froth Smoothie

Ingredients:
(Serves 1)

7 ripe and spotty bananas (frozen works best)
1 cup frozen strawberries
2 cups water
1 handful raisins or sultanas 
3 tbsp maple syrup 

Blend the bananas, strawberries and water until super frothy! Pour into a cute jar, top with maple syrup and raisins. Stir or shake and enjoy!

Grape Citrus Sorbet

Ingredients:
(Serves 1)

500g red grapes
1 lemon juice 

Remove the stalks from the grapes and freeze. Once frozen place in a blender with 2-3 cups of water and the lemon juice. Blits together, pour into a cute bowl and enjoy! Perfect summer breakfast :)

Raspberry Nice Kreme Sunday

Ingredients:
(Serves 1)

400g frozen spotty bananas*
1 cup frozen raspberries
3 cups water
1 fresh spotty banana

In a blender add the frozen bananas, raspberries and water. Pulse blend until creamy and fluffy, give it a stir half way if needed. Scoop into a large glass or bowl and top with chopped banana! Absolutely out of this world :D 

*TopTip: to freeze the bananas - peel and freeze on a flat surface in your freezer overnight. Make sure your bananas are soft, spotty and very ripe for the sweetest  nice kreme.

Creamy Strawberry Smoothie

Ingredients:
(Serves 1)

6 ripe spotty bananas
1 cup fresh or frozen strawberries

In a blender place the ingredients add about 3 cups of water and pulse blend, making sure a vortex doesn't form (this would oxidise the bananas making them taste funny). Once smooth pour into a cute jar and enjoy! Perfect for on the go :)

Grape and Carrot Bites

Ingredients:
(serves 1-4)
2 carrots
1 punnet grapes
Cocktail sticks

Using a peeler create long thin strips of carrot, wrap each grape in a strip and slide onto a cocktail stick. Simples :) the perfect snack!

Kiwi and Raspberry Smoothie

Ingredients:
(Serves 1)

6 super soft kiwis
2 cups fresh or frozen raspberries

Using a spoon, scoop the flesh out of the kiwi skin and place in your blender. Blend with some water and pour into a cute jar. Then place the raspberries into the blender with some water and blend until smooth, place into your jar with the kiwi and stir. Enjoy! :)

2 sticks celery
1 handful parsley 
5" cucumber 

Juice them all in your juicer* or blend and strain, display in a cute jar. Delicious!
