Simple Salad




Ingredients:
(Serves 1)

2 tbsp shredded kale
1 tbsp grated carrot
3 cherry tomatoes halved
1/2 stick celery chopped into small squares
1/4 red pepper chopped into small squares
2 tbsp red cabbage thinly sliced
1 tbsp homemade hummus (see my recipe in Dips category)
Lemon juice

Prepare all ingredients and combine in a bowl, stir together and serve. Enjoy the fresh salad midday and be satisfied until dinner time.
