Green Leek Salad

Ingredients:

(Serves 2)


1 head iceberg lettuce 

1/2 medium head cauliflower

2 medium courgette/zucchini 

1 leek

2 cups peas

6 diced small sweet peppers 


Dice the leek and sautee slightly in water until soft, add the peas and cook until bright green. Rinse and chop the lettuce, salad spin and add to your bowls. Finely chop the cauliflower, spiralize the courgette and add. Top with the steamed veggies and sweet peppers. Done! Super yummy :)
