Berry Creamy Smoothie


Ingredients:
(Serves 2)

3 tbsp natural plain soy yogurt
1 cup soy/ rice milk 
1 handful blueberries
1 handful blackberries
2 large strawberries
4 ice cubes

Blend together, serve.

The Perfect Hummus

Ingredients:
(One jar)

1 can chickpeas (Napoli from Sainsbury's is best)
1 tbsp tahini
1/2 juice of lemon
1 garlic clove (optional)
1 tsp ground pepper corns

Equipment essential:
Food processor
1 reused jar

Equipment optional:
Lemon squeezer
Garlic press
Spatular

Drain the liquid from the chickpeas into a small jar or jug, place all the chickpeas in to the food processor, add the lemon juice, tahini, pressed garlic (or just place whole peeled cloves in), and ground pepper corns. Then blitz on medium for a few seconds. Then add about 3 tbsp of the chickpea water and blitz on high power until smooth and creamy. (You may need to pause half way through the second blitz to scoop some of the mixture down off the sides of the food processor, just use a spoon or spatula)
Then remove chopping adapter and scoop humus into a jar, and your done!



Super Quick Sweet Potato Snack

Ingredients:
(Serves 1)

1 medium sweet potato
1 tsp coconut oil
1/2 tsp cinnamon
2 tsp maple syrup

Microwave the whole sweet potato for 5 mins full power. Let cool slightly then peel off the skin, place the rest in a bowl and mash with a folk, add the coconut oil, cinnamon and maple syrup. Serve and enjoy. Simple! :)

The Perfect Spring Greens


Ingredients:

3 large leaves of spring greens, (collard greens)
( you can find these at all large supermarkets eg Sainsburys and ASDA)
2 tbsp Water 
Ground pepper corns


  • First break the 3 leaves off the stalk
  • Before washing, using a chopping board place all the leave on top of one another and slice length ways and width ways into small pieces
  • Fill up a large salad spinner with water and wash all the pieces thoroughly 
  • Drain the water, then spin dry in the salad spinner
  • In a large based pan or frying pan (which has a lid) add the water and turn the heat up to medium
  • Wait for about 30 to 60 seconds for the pan and water to heat up
  • Put all the prepared spring greens into the pan and stir with a wooden spoon to coat all the leaves
  • Then turn the heat down if necessary and cover with the lid
  • Wait for about 1 minute
  • Then stir again, the leaves should start to turn bright green, cover
  • Wait for another 3 minutes, this time stirring about every 30 seconds
  • Remove from the heat 
  • Add the ground pepper
  • Serve immediately with any dish
